How come can a vegetable be so sweet?
I do believe that weird food and desserts are a lot around the world but, I've never thought that a vegetable could turn into a dessert and be one of the most delicious desserts ever that makes you feel loved and warm and of course, the vegetable is the carrot that turned into the famous carrot cake.
Carrot cake is a cake that contains some carrots and they are mixed in the batter with some white cream frosting to decorate it and some walnuts at the top to make it more delicious and it was firstly made in England. Many people like to add some spices to enrich its taste like cinnamon and ginger.
If you want to hear something funny let me tell you that British people in history did consider that Carrot cake is from the healthy cakes. This cake has 415 CALORIES PER 100 GRAMS , How come is it healthy? But, if they consider it healthy then, I'm all ears and I'm ready to have my healthy lifestyle right now.
Interesting stories are found in every dish and every dessert around the world. This cake was originally made by some British housewives during world war 2 because they didn't have any sugar and it was so expensive at that time to sweeten any of their desserts so, they decided to use carrots as a substitute because it is naturally sweet and in 1943, the ministry of food decided to appreciate them and publish a recipe for the carrot cake.
This cake is well appreciated and it became a tradition to be eaten in Easter. Each occasion has specific things that makes it famous like Reindeers in Christmas. Well, Easter has the carrot cake. In Easter, the children would leave some carrots outside for the Easter bunny so, it made sense to celebrate this occasion with Carrot Cake.
If you want to make a delicious moisty Carrot Cake then all you need is:
-2 cups of flour
-2 teaspoons of baking soda
-half a teaspoon of salt
-1 and a half teaspoon of cinnamon
-1 cup and quarter of vegetable oil
-1 cup of sugar
-1 cup of brown sugar
-1 teaspoon of vanilla
-4 large eggs
-3 cups of grated peeled carrots
-1 cup of chopped pecans
-half a cup of raisins (optional)
-For the cream:
-225 gm of cream cheese
-140 grams of powdered sugar
-third a cup of whipping cream
-half a cup pf chopped pecans
Bring a bowl and put the flour, baking soda, salt, cinnamon until they are blended then add the oil, eggs, sugar, brown sugar and vanilla in a separate bowl then after they are well mixed, we begin to add the dry ingredients slowly into the second bowl until the batter is smooth. Then, we add the carrots and the pecans into the batter.
We put the batter into 2 separate pans and divide the batter and bake them until the top looks springs from 35 to 40 mins.
After that we prepare the frosting by adding all the ingredients together until it looks fluffy. We place some of the frosting between the layers of the cake and at the top of the cake , put some pecans to decorate the cake then, it it ready to be served.
